(More customer reviews)The premise of this book is that if you've got a quart of canned tomatoes then you can make oodles of delightful meals lickety split. Home-canned tomatoes are asserted to be far better than tinned tomatoes (and they are), so part of the book is devoted to techniques of growing and canning your own tomatoes. The bulk of it, however, is a succession of recipes beautifully introduced and with meticulous directions. The real joy for the reader is found in these wonderful introductions, variously discussing the provenance of the dish, the inspiration for its creation, the subtle interplay of flavors, the first time the author served it, etc. Even if you hate tomatoes and wouldn't eat them on a bet, you can't help but be drawn in by these introductions. My two favorite recipes that I've tried so far are the the "Tomato Cream Sauce" (for pasta) and the "Absolutely Not Hungarian Goulash." I must confess that I used store-bought tomatoes for these and they were still great. As a bonus, several mouthwatering bread recipes are included (because bread goes so well with tomato dishes), as well as a list of everything a well-stocked pantry should contain to best use canned tomatoes.
Highly recommended both for the recipes, and for sheer reading entertainment.
